Place dry lentils in a pot with plenty of cold water. Bring to a boil and simmer for approximately 20 minutes or until just tender. Don't overcook as they will be cooked further in the oven. Drain and cool. Mix onion, garlic, squash and red pepper together in a large bowl. Stir in the olive oil, salt, pepper and lots of fresh minced thyme.

Tasty chicken meal prep stuffed with veggies and served with lentil salad and roasted cauliflower. I really like the quality and they have the great prices. Strain the lentils and run cold water over them for 1 minute to stop the cooking process. Let them drain for a few minutes then add them to a large bowl. Mix well and check for seasoning, you may need a little more lemon juice or salt to make the flavors pop. Set aside.
